For dinner last night I tried a new recipe: tortillitas with shrimp and a side of guacamole. Yum! I love to try new recipes here and there to spice things up a bit, and this one will definitely be served up again soon. The best thing about this recipe that you can add a number of things to it or swap out the shrimp for another type of fish. I added green peppers, hot peppers, and scallions and the tortillitas were delicious. Enjoy!
Tortillitas With Shrimp:
1/2 cup chickpea flour
1/2 cup white flour
1/2 tsp baking powder
salt and freshly ground black pepper
1/3 cup chopped onion
1/2 cup raw shrimp
2 to 3 tablespoons chives, parsley, thyme, or cilantro
1. Combine flours and baking powder with salt and pepper. Add a cup of water and stir to combine; consistency should resemble pancake batter. Stir in the remaining ingredients.
2. Put a large non-stick skillet over medium-high heat and fill its bottom generously with olive oil. When oil is hot, pour in half the batter until it fills the center of the pan; spread gently with a spoon to form a large pancake.
3. Cook about 3 minutes, or until pancake is set around edges; flip and continue cooking for another 3 minutes. Cook until crispy on the outside. Serve while hot with guacamole and salsa.
