I recently made these cookies while I was hosting some friends in my home for a fun little oils class. They were GONE after the class and the recipe was requested by everyone so I thought I would share it here as well. They are SUPER easy to make… as are pretty much all the recipes I share. Did you know you can cook with essential oils? I did not! And it took me a little time after using oils to warm up to the idea. What I’ve found is that using essential oils in recipes is SO darn easy. No zesting, cutting, dicing. Just add some drops and you are done. A huge time saver, especially when you’v got two little monkeys helping you cook. The kids made these with me and they loved making the little balls and dropping them into the powdered sugar. I’ll be making another batch this coming weekend for the Super Bowl.
*Just a quick note… it is very important to consider the oils you use in your recipes. You’ll want to use the best you can get your hands on, especially for ingestion. Young Living has an entire line of oils that are labeled as Vitality oils that are safe to ingest, which makes it especially easy and great for cooking ALL the things! Ok, recipe time:
LEMON CRINKLE COOKIES WITH ESSENTIAL OILS
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
10 tablespoons butter, softened
1 cup + 2 tablespoons organic sugar
1 large egg yolk
1 large egg
8-12 drops lemon essential oil (I used 8 in my recipe and they were perfect!) OR 1Tbsp lemon zest (from about 2 medium lemons) BUT use the oil, I promise they are better that way!
2 tablespoons milk
1/3 cup powdered sugar
Preheat oven to 350 degrees. Mix all ingredients together until thoroughly combined. Seriously just mix it all together. So easy! Shape into 1 1/2 inch balls and roll in powdered sugar. Place on un-greased cookie sheets, about 2 inches apart. Bake for 10-11 minutes. The bottoms will be light golden brown. Cool before moving to a cooling rack. For extra points sprinkle some powdered sugar on top! Store in airtight container.
